But I far from being medically trained in these matters.

The blood would still pool and run out with gravity. Cutting off a head (not some thing I have done but based on my farm work with animal carcasses) is not like cutting up bbq sausages. There is bone and tendon and sinewy and gristly bits to get through and takes some time. Several hacks and cuts I expect. I can well imagine getting quite bloody hands doing that. I don't think these guys were into too much etiquette nor do they seem particularly squeamish so all in hands and all and wiping off on the clothes I can see that happening. And how often have they done this before too? Probably not too many times...no butcher's tricks and techniques up their sleeves.
